Tagliatelle with Black Truffle are a classic dish of Italian cuisine. The tagliatelle are dressed with delicious black truffle, anchovy fillets, garlic, parsley and extra-virgin olive oil. This dish is traditionally served during special occasions or as a main course for truffle lovers.

Grate the truffle and chop the parsley, garlic and anchovies; then work the ingredients in a mortar until you obtain a homogeneous paste, which you will let rest covered with the oil.
Cook the tagliatelle in plenty of boiling water, drain al dente and sauté them in a pan in which you have warmed the truffle sauce, then serve immediately.
