Slice the white onions into very thin rings and slowly sweat them in a pan with a drizzle of extra-virgin olive oil and a small ladle of water for about 40 minutes until the onions are completely soft
Sprinkle them with a tablespoon of flour and loosen with a little milk until you obtain a rather loose béchamel, otherwise it will dry out the pasta
Adjust salt and grind the pepper, then cook the tagliatelle al dente and toss them in the sauce
Serve immediately with a sprinkle of grated Parmigiano
