Cut 2 or 3 slices of smoked salmon into strips and set them aside
Pass the remaining salmon through a sieve
Cook the tagliatelle in plenty of boiling salted water
Place the strained salmon in a serving bowl that has been warmed with boiling water and dried, and dilute it with the cooking cream heated separately
Season with salt and pepper
Drain the pasta while still quite al dente, transfer it to the serving bowl and gently toss
Finish with the smoked salmon strips set aside and freshly ground pepper
