Cut 2 or 3 slices of smoked salmon into strips and set aside
Pass the remaining salmon through a sieve
Cook the tagliatelle in plenty of boiling salted water
Put the salmon puree in a preheated basin that has been warmed with boiling water and dried, and dilute it with heavy cream warmed separately
Salt and pepper to taste
Drain the pasta when very al dente, add it to the basin, and mix gently
Finish with the strips of salmon set aside and with ground pepper
