
Tah Cheen
Tah Cheen, also known as Persian rice chicken, is a delicious dish made with chicken, basmati rice, spices, and yogurt. The chicken meat is marinated with turmeric and then cooked together with saffron-flavored rice. The result is a richly flavored and spiced dish, with a characteristic crispy layer of rice on top. Perfect to serve as a main course at a special dinner or to celebrate a special occasion.

500g - Turmeric
1pinch - Basmati rice
300g - Yogurt
200g - Saffronto taste

1 - Egg yolks

Preparation

Chop the onions and fry in oil until they are slightly golden, then add a pinch of turmeric

Fry the chicken in the onions until it changes color

Add 3 cups of water and bring to a boil

Simmer on low heat until the chicken is cooked

While the chicken is cooking, beat the yogurt until smooth

Dissolve the saffron in half a glass of hot water

Add the saffron, salt, pepper, and egg yolks to the yogurt and mix very well

Wash the rice in warm water, pour the water into a large pot, and bring to a boil

Cook the rice until al dente

Pour and spread a few tablespoons of oil and yogurt mix in a non-stick cake pan

Add a thin layer of rice and flatten with the back of a spoon

Add a layer of chicken on top followed by another layer of rice

Again, flatten the rice

Then pour and spread several tablespoons of the yogurt mix over the rice

Continue this way until the chicken, rice, and yogurt mix are used up

Drizzle a little oil on top

Cover and bake in the oven for about 60 minutes on medium heat until it is well golden and crispy

Once cooked, remove the cover and let cool for a few minutes

Place an inverted plate on the cake pan and flip it over

Tap the pot to loosen the contents inside
