Flavorful Grouper is a very tasty fish main course that is simple to prepare. The grouper is lightly floured and then cooked in a pan with olive oil until it becomes crispy and golden. It is then served with a delicious sauce made from white wine, lemon, capers and anchovies. The fresh flavor of the lemon pairs perfectly with the delicate taste of the fish.
Lightly dust the grouper with flour
Place it to cook in the oven in a baking dish with 3 tablespoons of oil; let it come to a boil and then moisten the fish with the white wine and the juice of half a lemon; season with salt and let it simmer for about ten minutes
Coarsely chop the capers together with the deboned and desalinated anchovies and add them to the grouper
Continue cooking over moderate heat for about thirty minutes
Serve it with its sauce
