    Peel the garlic, cut it in half and rub it well over the entire piece of meat

    Tie the roast with colorless netting and tuck the sage under the twine

    Chop the anchovies with the gherkins, mix in 20 g of butter and spread this mixture over the meat

    In a casserole heat 4 tablespoons of oil and brown the veal knuckle evenly, then season with salt and pepper and add 2 tablespoons of cream

    Cover and cook for 90 minutes, basting with the cream little by little

    Serve the roast sliced with the sauce
