
Savory scaloppine are a classic dish of Italian culinary tradition. Brown the slices of meat in the butter and oil for 5 minutes
Remove them and, in the cooking juices, add the sliced olives and a chopped mixture of parsley, capers and anchovies
Cook for a moment, sprinkle with wine, return the cutlets to the pan, season with salt and cook for another 5 minutes
