Melt 30 g of butter in a pan and sear the steaks, cooking them 2 minutes per side; season with salt and pepper
Then remove them from the pan and arrange them on a warmed serving plate
In the pan melt another 30 g of butter, then add the hot mashed potato and the parsley; season with a grind of pepper and loosen with 2 tablespoons of milk
Stir well, heating the mixture until it becomes creamy
Then spread it over the steaks and serve immediately
