Clean the peppers, cut the flesh into strips and sauté these strips in a pan with one tablespoon of butter.
Strain the tomatoes through a sieve and cook the resulting pulp in a pan with two tablespoons of butter and a pinch of salt.
Beat the eggs in a bowl, add the garlic and a handful of chopped parsley, a pinch of salt and a pinch of pepper; add the tomato pulp and finally the peppers; mix well to distribute the ingredients, pour everything into the pan with more hot butter; shape and cook the frittata, turning it to cook both sides.
