Tomatoes with tuna are a tasty summer side dish that is very simple and quick to prepare. Round tomatoes are hollowed out and stuffed with a delicious tuna-in-oil mixture flavored with chopped spring onion and parsley. To finish the dish, a little breadcrumbs are sprinkled on top and it is dressed with olive oil, salt and pepper.
Cut the tomatoes in half, remove the seeds and some of the flesh
Salt the insides, turn them upside down and let them release water; then wash and dry them
Boil the potatoes, then cut them into cubes and add the shredded tuna, chopped parsley and spring onion
Fill the tomato halves with the mixture
Grease the bottom of a baking dish with a little oil, place the tomatoes in it, drizzle with a little oil and sprinkle with salt, pepper and breadcrumbs
Bake for about half an hour in a 200°C oven
Serve warm or cold
