Add butter to the cooking juices of the fillets and sauté the slices of white bread, remove them and heat the truffle slices in the same pan
Cut the foie gras into slices the same shape as the fillets
Place the fillets on the white bread, then the foie gras, then the truffle
In the cooking juices, let the Madeira evaporate, adding butter and whisking, then pour over the tournedos
