Soften the butter and mix it into a cream with 75 g of Parmesan, salt, pepper, and a dash of nutmeg
Add 1 egg and 1 tablespoon of breadcrumbs and continue to mix vigorously
Add 1 egg and 1 tablespoon of breadcrumbs at a time
When the mixture is smooth, form small balls and drop them into the boiling broth
Cook them for a few minutes and serve with the remaining Parmesan
Store in the refrigerator in an airtight container for up to 3 days
