Preparation

    Carefully clean the truffles by first brushing them with a small brush to remove any soil residue, then wipe them with a damp cloth, dry them with a tea towel, and grate them

    Break the eggs into a bowl, add a pinch of salt and four tablespoons of cream, and whisk everything together until you get a smooth mixture, then add the grated truffles

  3. STEP 3 OF 7

    Heat the oil in a pan, pour in the egg and truffle mixture, and let it set well for 5-6 minutes, then flip the omelette and let it cook for the same amount of time on the other side

  4. STEP 4 OF 7

    Serve it hot after drizzling with a few drops of lemon juice and garnishing with sprigs of parsley and truffle slices

  5. STEP 5 OF 7

    If you're not very experienced, you can cook the mixture in four batches using a small pan to make four individual omelettes

  6. STEP 6 OF 7

    This way, it will be easier to flip the omelette and cook it to the right point, so it is golden on the outside and soft on the inside

    While cooking one omelette, keep the others warm in the oven
