Boil the potatoes and then peel them
In a blender, place the chopped potatoes, well-drained tuna, parsley, and anchovies, and blend while slowly adding a mixture of lemon juice, oil, and salt until a smooth cream is obtained
Place in individual bowls, garnish with parsley, and serve with toasted bread crostini
