Turkish cucumbers are a fresh and light side dish typical of Mediterranean cuisine. Their simplicity and speed of preparation make them perfect to accompany main dishes based on meat or fish.

Peel the cucumbers and slice them very thinly with a potato chip tool, place them in a colander, sprinkle with salt and let them drain for an hour.
Dry them well. In a bowl mix the yogurt with salt and pepper.
Add the thinly sliced cucumbers and some fresh mint leaves.
