
Rapini in Foil are a delicious and healthy side dish, made with simple but flavorful ingredients. The rapini are cooked in foil together with garlic, lemon, olive oil, salt and pepper, which pair perfectly with their freshness and slight bitterness. This dish is a classic of the cuisine of Puglia and represents a tasty and healthy way to enhance a meal.


Clean the rapini, wash them, drain well and divide into four portions
Cut four sheets of aluminum foil large enough to hold the vegetables in a single layer and brush them repeatedly with a little oil
Place the small piles of rapini on the respective foil sheets and put a slice of garlic in the center of each
Sprinkle them with the juice of half a lemon strained through a sieve, pour a drizzle of oil, season with salt and pepper and close the packets
Bake in a preheated oven at 200°C for about 40 minutes
Remove, let rest for a few minutes and arrange on a serving plate
