Cut each steak horizontally with a sharp knife without detaching it from the bone
Insert a slice of Fontina into the cut
Pound the steaks, season with salt and pepper, dredge them in flour, then in beaten egg, then in fine breadcrumbs
Fry them over moderate heat in plenty of butter until they are a nice golden color
