Cut each steak horizontally with a sharp knife without detaching it from the bone
Insert a slice of fontina into the cut
Pound the steaks, season with salt and pepper, coat them in flour, then in beaten egg, and finally in fine breadcrumbs
Fry them over moderate heat in plenty of butter until they are golden brown
