
Vegetable Flan

- Potatoes
4 - Eggplants
2 - Green beans
200G - Onion
1 - Eggs
2 - Breadcrumbs
1Handful - Grana cheese
60G - Oreganoto taste

Preparation

Boil the potatoes, eggplants, and green beans separately in salted water

Drain the vegetables and pass them through a food mill

Add breadcrumbs, grated Grana cheese, eggs, and a pinch of oregano to the puree

Adjust the salt and mix everything together

Place the mixture in a buttered baking dish, level it, and cover it with sliced onion

Sprinkle with oregano, drizzle with oil and butter, and bake at 170 degrees for 1 hour
