Preparation
- STEP 1 OF 6
Cut the asparagus in half, trying to keep the tips whole. Use the tender part of the stem as well.
- STEP 2 OF 6
Let them season with a few tablespoons of oil in a non-stick pan for 15 minutes, covered and on low heat.

Beat the eggs, add salt, pepper, and grated Parmesan.
- STEP 4 OF 6
Pour the mixture over the vegetables and let it set. Add the cherry tomatoes and very thinly sliced onion.

Serve garnished with fresh arugula.
