
Carbonara is a typical dish of Roman cuisine, famous for its creaminess and the intense flavor of its main ingredients: smoked pancetta, Parmigiano cheese and eggs. This version uses vermicelli as the base pasta.









Beat the eggs in a bowl and add 1 pinch of black pepper and Parmigiano cheese
Sauté the smoked pancetta, previously cut into small cubes, with the extra-virgin olive oil and the butter
Cook and drain the vermicelli, pour them into the bowl with the eggs and mix quickly
Pour the pancetta with its cooking fat over them
Sprinkle with parsley and serve immediately
