Preparation

    Clean the wild boar's skin and remove the entrails

  2. STEP 2 OF 3

    Sprinkle the inside with salt, pepper, garlic, and fennel flower, placing the rolled pancetta and fennel sprigs in the center, and sew with kitchen twine
