Cut the meat into small pieces and sauté dry (in a pot without seasoning) to remove the wild flavor
In a pot, sauté a crushed clove of garlic which you will remove before it darkens; then add a small aromatic mix made with a little onion, celery, a carrot, garlic, sage, and meat, season and then deglaze with white wine
Add salt and pepper to taste
As the wine evaporates, add strained tomato and cook gently with the pot covered until the sauce is reduced
Continue adding a ladle of broth little by little until finished
It should result in quite a dense sauce
