Remove the peppers from the string, rub them with a cloth, remove the stem, and cut them in half lengthwise
Remove the seeds
In a pan, heat a generous amount of olive oil; when it is very hot, immerse the peppers and quickly turn them with a fork as soon as they puff up
Remove them from the oil using a slotted spoon
Let them drain on kitchen paper, place them on a serving dish, and generously salt them
They are excellent with an aperitif
