Preparation

Clean the zucchini, wash them, dry them, and slice them a few millimeters thick

Place them on a wooden board covered with a clean kitchen towel and put them in the sun to dry for a few hours, turning them occasionally

Fry them in plenty of hot oil, placing them on a sheet of kitchen paper as they are ready

When they are cold, arrange them in layers in a large bowl, seasoning each layer with salt, chopped garlic, and mint leaves

Cover with vinegar and let them rest for at least a couple of hours before serving
