
Zucchini a scapece are a tasty and fresh side dish, ideal to serve during the summer months. They are fried zucchini, marinated in vinegar and flavored with garlic and fresh mint. A simple but very flavorful dish that highlights the sweet taste of the zucchini.






Trim the zucchini, wash them, dry them and slice them a few millimetres thick
Arrange them on a wooden board covered with a clean kitchen cloth and place them in the sun to dry for a few hours, turning them occasionally
Then fry them in plenty of hot oil, placing them as they are ready on a sheet of absorbent kitchen paper
When they are cold, arrange them in layers in a large bowl, seasoning each layer with salt, chopped garlic and mint leaves
Cover with vinegar and let rest for at least a couple of hours before serving
