Preparation

    First, blend the steamed carrots once they have cooled down

    Prepare the dumplings by mixing all the ingredients together. You should obtain a batter

    Meanwhile, bring some water to a boil, salt it, and grate the dumplings directly into the water using a spÀtzle grater

    They will be ready when they float to the surface.

    Once ready, transfer them to a pan where you have sautéed garlic with a knob of butter and finely chopped rosemary.

    Toss and serve hot with a sprinkle of Parmesan cheese and fresh rosemary
