Peel and finely slice the onions. In a large pan, heat the extra virgin olive oil, add the onions and a pinch of salt. Cook over low heat for 10 minutes, stirring often, until they start to soften.
Add the brown sugar and continue cooking for another 5 minutes, then deglaze with balsamic vinegar and continue cooking until the onions are well caramelized and golden.
Toast the slices of bread in a hot oven at 200°C for 5 minutes, or on a grill, until they are crispy.
Place a slice of Goat Tomino on each slice of bread. Bake the bruschettas for 2 minutes, just enough to slightly soften the cheese.
Finish with a generous spoonful of caramelized onions and fresh thyme leaves. Serve immediately.
