

Savory gluten-free madeleines filled with olive paste. Simple batter made from gluten-free flours, enriched with spices, grated cheese, and olive paste. Baked in madeleine molds, perfect as an appetizer or snack.
Beat the eggs with the milk, salt, and pepper.
Add the sifted flours with the baking powder and mix until a smooth batter is obtained.
Pour in the melted butter (or extra virgin olive oil) and combine with the mixture.
Incorporate the spices (turmeric and ginger), grated cheese, and olive paste.
Pour the mixture into the silicone madeleine molds, filling the cavities.
Bake in a preheated oven at 180°C for about 10 minutes, until the madeleines are golden.
