Vinification The grapes, destemmed and cooled to 8 °C, are gently pressed. The must decants for 36 hours before being started on slow fermentation at low temperature (10–12 °C), in order to preserve aromas and aromatic finesse. Aging in steel for 6 months gives harmony and liveliness. Tasting notes Color: pale straw yellow. Aroma: hints of acacia and wisteria flowers, combined with a delicate touch of honey. Taste: fresh, harmonious and pleasantly persistent, with a perfect balance between sugars and acidity.
