We make pasta at an altitude of 700m above sea level within 72 hours of milling the hard wheat to obtain the semolina, ensuring all the organoleptic properties and fragrances of our fine Italian wheats. The semolina is mixed with mountain water and extruded through bronze dies. The drying phase occurs at low temperature and in a static manner for 12/36 hours (depending on the format); the result is a rough and porous pasta as traditional Italian cuisine desires, capable of ensuring the best cooking performance.
