We produce pasta at an altitude of 700 m.a.s.l. within 72 hours of milling the durum wheat to obtain the semolina, in order to guarantee all the organoleptic properties and the aromas of our precious Italian grains. The semolina is mixed with mountain water and extruded through bronze dies. The drying phase occurs at low temperature and in a static manner for 12/36 hours (depending on the format); the result is a rough and porous pasta, as per Italian tradition, able to ensure the best cooking performance.
