We produce it at an altitude of 700m a.s.l. within 72 hours of milling the durum wheat to obtain the semolina, this is to ensure all the organoleptic properties and aromas of our precious Italian grains. We mix the semolina with mountain water and bronze-die extrude; for the drying phase, we use a low temperature and static mode for 12/36 hours (depending on the shape), the result is a rough and porous pasta that retains sauce well as traditional Italian practices require, a pasta able to guarantee the best cooking performance.
