A careful selection of pomace is distilled in a bain-marie with a discontinuous steam method. It is then aged in small barrels of oak wood from Limousin, in a secluded and light-free environment. During the 18 months of aging, the wood slowly imparts its aromas to the distillate, giving it a precious roundness.
