Typical of western Sicily, this pesto encapsulates the scents of summer. Raw tomato, toasted and salted almonds, aromatic herbs like basil, a pinch of garlic, and naturally extra virgin olive oil are the essential elements for a good trapanese pesto. However, we made it our own by also adding almond cream and a bit of mint to achieve a round and balanced flavor. It may contain: pistachios. Store in a cool and dry place; after opening, keep in the refrigerator between 0°C and +4°C for a few days.
