Sicilian Thistle Honey Sicilian Thistle Honey is produced during the months of June and July. It has a light amber color when liquid, tending towards ochre when it spontaneously crystallizes a few months after harvest into uniform crystals. It is highly fragrant and has an equally intense flavor. Our Sicilian Thistle Honey is produced in the Messina, Trapani, and Palermo areas in the months of June and July. Characteristics: Color: from light amber when liquid to ochre when crystallized. Crystallization: spontaneous a few months after harvest, uniform crystals. Smell: very fragrant. Taste: just as strong as the smell. Uses: it has liver detoxifying properties. Sicula Bee: The Sicula bee has greater genetic variance compared to any other subspecies of European honeybee, which is due to its African origins. Genetic variance refers to a greater number of genes that ensure higher reactivity to any potential issues. Early brood development, sometimes 8 or 9 frames between December and January, allows for young bees, thus greater longevity and dynamism compared to the Ligustica and other northern bees, which have a winter brood break. It is requested by growers for pollination of protected crops (watermelons, cantaloupes, strawberries, etc.) being, in its hardiness, active and functional in the extreme conditions of tunnels, where the nighttime temperature of 0° can rise to 40° during the day. It has been shown that in every hive only a small part of the bees goes out to forage, and of these, only about 20% collect pollen and thus are capable of pollinating the flower. As pollen is necessary for the sustenance of the brood and since the Sicula Bee has abundant brood all year round, many more bees are employed for pollen collection, which results in the Sicula Bees being able to pollinate larger areas of crops, all else being equal. The Sicula Bee has very low honey consumption, which allows for a greater likelihood of survival of the hive with the same amount of honey stores. Strong self-defense capability; in twenty-five years of work with the Sicula bee and with Sicula F1, I have never encountered a situation where a hive or nucleus with a queen was robbed.
