Denomination: Nebbiolo d'Alba DOC Grape variety: 100% Nebbiolo Name: Nebbiolo d'Alba Alcohol: 14.5° Format: 0.75L Production area: Cannubi, Barolo (CN), Piedmont, Italy Description: The winemaking is done in a traditional way, with submerged cap maceration for about 12 days in wooden tanks with frequent pump-overs. The aging takes place in steel barrels for about 4 months, then in Slavonian oak barrels. Bottling occurs in the summer, followed by a period in the bottle lying down for about 6 months. The color is ruby red in youth, acquiring garnet hues over time, until delicate orange reflections emerge. On the nose, it is broad and pleasant, fragrant with fruity scents such as raspberry and jam. Over time, it acquires interesting spicy notes. On the palate, it is round, with elegant tannins, balancing red fruit, plum, blackberries, spicy notes, and tobacco. It is harmonious, with a long and persistent finish. Recommended pairing: with meat-based first courses or risottos, red meats, roasts, grilled dishes, braised meats, game, well-aged cheeses, and white truffle. Also perfect with a cheese fondue, especially if enriched with white truffle. Recommended temperature: 16-18° C
