Vinification is carried out using the traditional method; alcoholic fermentation with the skins lasts for a few days at 25-26°C. Maturation begins with an initial period in stainless steel tanks for about 5–6 months, followed by transfer to barriques for another 3 months. Aging is then completed in the bottle for about 5–6 months. The color is clear ruby red with garnet reflections. On the nose there are fruity, floral, vegetal and spicy notes, with scents of berries, tamarind, black pepper, cloves, leather, coffee and licorice. On the palate it is dry, warm, soft, moderately fresh and moderately tannic, balanced, intense, persistent and harmonious; the same aromas perceived on the nose are found again. Recommended pairing with appetizers based on cured meats and aged cheeses, meat-based first courses, grilled meats, sliced steaks (tagliata) and game. Serving temperature: 16–18°C.
