Aging in 500-liter tonneaux with the addition of yeast blend and periodic batonnage for about 36 months; after this long period in wood, 2-3 rackings are carried out until a natural clarification is obtained; bottling and subsequent resting of the bottles in a horizontal position until the time of marketing. Wine of garnet red color with orange reflections; the bouquet is very intense, complex and persistent with notes of licorice, wild violet and red fruit jam; on the palate, the wine is austere, warm, enveloping and soft. It may show a slight deposit in the bottle due to natural sedimentation and the non-use of clarifying agents.
