The sparkling process occurs in September of the year following the harvest. The aging on the lees can last from a minimum of 18 to 30 months. Rémuage occurs manually on pupitres performing 21 positions. The duration of the remuage is about 40 days. Wine of rosé color with coppery reflections; the perlage is fine and persistent; the bouquet is intense with slight hints of crusty bread, hazelnut, honey, and with more significant hints like rose and white flowers. On the palate, the wine is savory, enveloping, and very persistent. Excellent as an aperitif, recommended with appetizers and first courses or to accompany grilled fish and shellfish, it expresses all its character with baked fish.
