
The clusters of Recioto are normally the most beautiful and the first to be harvested when they are perfectly ripe. Once the grapes have undergone the drying process, they are pressed using the traditional old method of vertical pressure. The pomace, still dripping, is taken to the distillery where it is stacked in piles and allowed to ferment slightly. Subsequently, a discontinuous distillation in a copper still is carried out on the obtained liquid, to extract the largest possible amount of scents and flavors for tasting. VISUAL EXAMINATION: The liquid is perfectly transparent, without any suspended particles that alter the perfect penetration of light rays through it. Its complete transparency gives it the definition of brilliant. It is colorless and reveals a medium-extractive body. OLFACTORY EXAMINATION: It presents a medium complexity of the overall volume of perceived odors, delicate, pleasant, and substantially vertical. There is good retro-olfactory persistence with a perception of aromas for at least a minute after swallowing. It has a slightly floral sensation of acacia honey and lily of the valley; a delicate fruity sensation of peach, dried apricot, with nuances of exotic fruit and Williams pear. On the finish, a spicy note of white pepper and star anise is perceived. TASTING EXAMINATION: The warming sensation is significant even if there is no negative sharp sensation. The consistency and roundness on the palate is enveloping. The dryness is well defined with a certain glycerolic roundness that enhances its pleasantness.
