

History of the vine: Sparkling white wine of Typical Geographical Indication, obtained from the soft pressing of Malvasia grapes from the countryside of Alberobello, where since 1949 the Social Winery Pietro Tauro has been active. The Edoné is a sparkling wine with an intense aroma, fresh and harmonious taste due to a residual sugar that gives it a full and round flavor. The must, fermenting in autoclave, at controlled temperature, retains the carbon dioxide naturally produced during fermentation, giving the wine the typical fruity aroma of the grape. Vinification: Early harvest of the grapes by one/two weeks to obtain greater acidity and freshness. White vinification with the conclusion of fermentation in autoclave, aimed at maintaining the natural CO2. Pale yellow with greenish reflections. Notes of white flowers and exotic fruits. Soft and harmonious, marked by the freshness of its light foam. Pairs well with light and fresh appetizers like panzanella or crostini topped with sautéed vegetables, excellent with pizza. MALVASIA BIANCA 100% IGT. Aging on fine lees in autoclave at 1.5 bar pressure for 1-2 months. 11.5% vol. 750 ml. Serve at a temperature of 7°-8° C.
