Framboos is the raspberry beer from Het Boerenerf, a small Belgian agricultural reality that produces lambic with the same care and patience with which the land is cultivated: slowly, respecting the times of nature and spontaneous fermentation. A blend of young and old lambic to which the raspberries from the De Daalkouter farm are added — fresh fruit, sourced and carefully selected. The fruit is blended with the lambic and then macerated for three months, allowing the wild acidity and the sweetness of the raspberry to merge into a balance that only time can build. Fermented, aged, and bottled entirely on-site: a very short supply chain, authentic craftsmanship. Tasting notes: Nose: fresh and ripe raspberry, wild acidity, funky lambic notes, floral and fruity. Palate: tart, fruity, raspberry in the spotlight, fine tannin, long and complex finish. Structure: Framboos, blend of young and old lambics, three months maceration, spontaneous fermentation. To be served at 10-12°C in a wine glass. Perfect paired with fresh cheeses, desserts with red fruits, dark chocolate or as a contemplative beer. Framboos: raspberry, lambic and the patience of those who know how to wait.
