La Volpe Rossa is a Sour IGA style beer, the result of a collaboration between Birrificio Sabino and the nearby Tenuta SantaLucia. Their Cabernet grapes provide indigenous yeasts to the beer wort, which lead a spontaneous fermentation that deeply marks the taste. After eight months in the barrel and an equal time of refermentation and resting in the bottle, La Volpe Rossa brings to the glass the acidic freshness and fine bubbles of a pet-nat wine, supporting elegant fruity and floral aromas.
