The Paccasassi in oil by Rinci are a preserve of sea fennel in extra virgin olive oil and have a very distinctive and unique flavor. Its aromas evoke hints of fennel, lemon, and carrot. Paccasassi: the treasure of Conero Paccasassi, also known as spaccasassi, are a wild herb that grows in the rock overlooking the sea. They are usually found in the area of the Conero Riviera and are an ancient gastronomic tradition as well as a pride of Ancona. This sea fennel is also listed among the protected plant species in the Regional Park of Conero, in other Italian and European areas. Paccasassi have a very particular taste, in fact, they can be used as the main ingredient in many recipes or as a condiment for other dishes such as fresh bread, mortadella, and anchovies.
