The Spongata cake is a typical dessert from Emilia Romagna, with ancient Jewish traditions. In Busseto (Parma), when Giuseppe Verdi had just finished publishing the libretto of Don Carlos (1867), this specialty of shortcrust pastry filled with honey, almonds, pine nuts, candied fruit, citron, and raisins was born in the ancient Muggia pastry shop. A specialty that the composer was fond of!
