This particular version is produced at the Alchimie di Circe farm, naturally vegan and gluten-free. Unfortunately, its use has been lost and it is one of the wild plants most eradicated from Italian gardens. This version is pickled according to the Piedmontese method, which makes it tastier and more floral, immersed in fragrant Umbria extra virgin olive oil, which rounds out the flavor.
