This is followed by malolactic fermentation at a controlled temperature of 20°C. The wine is aged in steel for about 5 to 6 months, followed by bottle aging for 1 month. The wine is a clear and bright ruby red, initially with spicy aromas, black pepper and small red fruits; it then evolves in the glass offering a softer and broader profile with sweeter fruit notes. The taste is enveloping and intense, with good persistence and the light tannin characteristic of Grignolino, just perceptible. Pairings: cold cuts and appetizers, first courses, white meats, bagna caoda. Ideal as an aperitif and with fish dishes.
