Grill the salmon on the griddle until almost cooked.
Meanwhile, in a bowl, mix the lemon juice, honey, and cornstarch.
At this point, remove the salmon from the grill and pour the sauce over it, let it thicken for 1 minute, then put the salmon back to finish cooking, adjusting the salt.
For the potato cream, peel and dice the potatoes, cook them with spring onion and vegetable broth, then blend them with an immersion blender into a cream, adding extra virgin olive oil, turmeric, and salt.
Garnish the dish with sautéed turnip greens.
