Millet balls with a rich seasoning of vegetables, chickpeas and curry, thickened with chia seeds and cooked in an air fryer. A tasty and nutritious vegetarian dish, ideal to serve with salad and vegan mayonnaise.

  • Water for cooking millet600g
  • Extra virgin olive oil for cooking millet25g
  • Salt for cooking millet1teaspoon
  • Seasoning
  • Garlic clove without the core1unit
  • Washed and dried basil leaves20units
  • Extra virgin olive oil for seasoning50g
  • Zucchini cut into pieces350g
  • Eggplant cut into pieces350g
  • Cooked chickpeas (including canned ones)200g
  • Salt for seasoningto taste

Preparation

  1. STEP 1 OF 7

    Put the millet, water, 25 g of extra virgin olive oil and salt in a pot. Stir, cover with a lid and cook until the water is absorbed, about 30 minutes. Then turn off the heat and let it rest for 8-10 minutes.

  2. STEP 2 OF 7

    Blend the garlic, basil and 50 g of extra virgin olive oil, then pour everything into a large pan and sauté for 2 minutes.

  3. STEP 3 OF 7

    Add the zucchini and eggplant cut into pieces, stir and cook for 20 minutes.

  4. STEP 4 OF 7

    Add the cooked chickpeas, curry and salt to taste. Stir to flavor and cook for another 5 minutes.

  5. STEP 5 OF 7

    Let the mixture cool, then add the gelatinous chia seed mixture obtained by soaking the chia seeds in water. Mix well.

  6. STEP 6 OF 7

    Form the balls with the mixture and cook them in an air fryer at 175°C for 20 minutes, checking the cooking.

  7. STEP 7 OF 7

    Serve the balls with fresh salad and some dollops of vegan mayonnaise.
