Thinly slice the onion and wash the vegetables, cutting them into sticks.
Sauté the onion in a little oil, add the vegetables starting from the hardest to the softest (carrots, bell peppers, zucchinis). The vegetables should remain crunchy.
Adjust with salt or soy sauce, cook the noodles following the instructions on the package.
Pour the noodles into the wok with the vegetables and add the beaten egg with a little soy sauce.
Stir often and let cook until the egg is well blended. Serve hot with a drizzle of sesame oil.
