Blend all the ingredients except the breadcrumbs until you get a smooth mixture.
Place the mixture on the breadcrumbs and form 6 cutlets.
Cook the cutlets in a fryer at 200°C for 12 minutes, turning them after 8 minutes.
Add a splash of extra virgin olive oil before serving.
